Well, the fam bam and I have tired clean eating before. It wasn’t too bad and we all felt a lot better… But the plan to eat healthy did not last long. We only did it for a week or two and went back to our old ways of quick meals and fast food.
Well it has now been a month or so that we have been in this rut and we are sick of it… literally and hypothetically.
So after weeks of mom asking for us to go back to clean eating, we are at it once more. We looked up many of recipes and we came up with a few of our own.
We found healthy treats for the kids and yummy fruits for them to snack on.
I may need to say a few prayers for me to stick to this clean eating stuff. Not because it doesn’t taste divine, but because I am sadly addicted to those nasty diet drinks and disgusting fast food joints.
I have a plan to help keep me on track and luckily I have my mom here so we can support each other… BUT, we are about to go on a 3 week vacation and I am worried about our food options. Hopefully we will figure this stuff out and we will stick to our new eating habits!
Tonight for dinner we made a yummy side dish, zucchini cakes, with a main dish of pizza (no worries… pizza was organic and all natural!)
I want to share the Zucchini Cake recipe with you all! It was absolutely divine and I will be making these bad boys a lot!
You will need:
1 Zucchini (shredded)
2 large eggs
1 cup feta cheese
3 Tbs of coconut flour
3 Tbs of flaxseed meal
a dash of italian seasoning
2 tsp of oregano
1 tsp sea salt
1/2 cup fresh chives (chopped)
We used coconut oil to fry, but you can use whatever.
You want to blend all of the ingredients together.
We used our food processor, but you can shred your zucchini with a cheese grater and just mix well.
Next we melted out coconut oil and placed round patties in medium heat for about 4 min. on each side. Really, you want to cook them until they are golden brown on both sides.
Once done we garnished with regular greek yogurt and OMGosh!!!
These delicious little round cakes of heaven are too die for good. You could honestly eat them as a meal or a side.
We have spent the day eating clean and actually cleaning out the food cupboards and fridge of all the “bad foods”!
